Dairy Free Stroganoff
Our rendition of stroganoff is really more like noodles in fancy gravy because we typically don't eat dairy. We like this recipe the traditional way, with beef, but it is equally delicious if you substitute the ground beef with chopped mushrooms and swap out the beef broth for vegetable stock. It is hearty and rich just like the original but when you take away the saturated fat that comes from the dairy it becomes much more heart healthy.
